Tender pork al pastor served with flame-roasted jalapeño corn, riced cauliflower seasoned with fresh cilantro and lime juice, topped off with guacamole.

Cilantro, fresh, finely chopped 1 oz. 1 cup
Lime juice, freshly squeezed 2 1/2 fl. oz. 1/4 cup

Pork, al pastor seasoned, prepared 1 3/4 lbs. 3 3/4 cups

Preparation Instructions:
Step 1
Prepare riced cauliflower according to package instructions. Fold in cilantro and lime juice. Hold hot. Prepare corn and jalapeño blend according to package instructions. Hold hot.
Step 2
For each serving; place 3/4 cup of cauliflower rice in a bowl. Place 2/3 cup corn and jalapeño blend alongside cauliflower. Place 3 oz. of pork on other side of the bowl. Finish with a guacamole cup on the side.
