Preparation Instructions:
- Step 1
- Prepare grain blend according to package instructions. Chill.
- Step 2
- In a medium-size bowl combine cilantro, parsley, 3 fl. oz. lemon juice, 5 fl. oz. olive oil, garlic, and 1/2 tsp. salt. Stir in chilled grains, cover and let mixture marinate for at least 30 minutes before serving.
- Step 3
- Combine cucumber, tomato and red onion. Season with 2 tsp. lemon juice, 1 Tbsp. olive oil, and 1/4 tsp. salt. Set aside for service. Cook falafel balls according to package instructions, hold warm.
- Step 4
- For each serving; place 6-1/2 oz. (1 cup) grain blend in a serving bowl. Add 2-1/2 oz. cucumber-tomato salad, 3 falafel balls, and 2 oz. Tzatziki sauce.
