Fish tacos don't need much explanation, but they definitely deserve a place on your menu—they're on-trend and really delicious.

Ingredient Weight Measure
Simplot Harvest Fresh™ Avocados: Extreme Supreme Guacamole, Frozen 12/1lb 16 oz.
Halibut, or other white flesh fish 64 oz.
Southwest seasoning to taste
Red cabbage, shredded 8 oz.
Green cabbage, shredded 8 oz.
Corn tortillas 32 each
Tomato, diced 8 oz.
Cilantro as garnish
Lime wedges as garnish
Preparation Instructions:
Step 1
Thaw guacamole according to package instructions.
Step 2
Season fish with the Southwest seasoning. Cook according to preference by grill, flat top, or oven. Set aside for service.
Step 3
Blend the red and green cabbages together.
Step 4
To build the tacos, heat 2 corn tortillas on a flat top grill. Place 1/2 oz. of the blended cabbages in each tortilla. Top each with 2 oz. cooked fish, 1/2 oz. guacamole, and 1/4 oz. diced tomato. Garnish with cilantro and lime wedge. Serve.
