Preparation Instructions:
- Step 1
- Thaw spinach, hold chilled until ready to use.
- Step 2
- Preheat deep fryer to 345˚F.
- Step 3
- Melt 2 oz. of butter in a pan, add garlic and thawed spinach, cook until spinach is heated through, about 5 to 7 minutes. Stir in 1 cup white cheese sauce and bring to a slow boil. Turn heat off, taste and season with salt and pepper as needed. Hold warm for service.
- Step 4
- Melt remaining 2 oz. of butter in a pan, add diced onions and 1 tsp. of sugar. Cook over medium heat until onions turn golden brown, stir often. Add Maggi sauce and 16 oz. white cheese sauce. Bring to a low boil, turn off heat. Taste and season with salt and pepper as needed. Hold warm for service.
- Step 5
- Place buffalo sauce and the remaining 16 oz. white cheese sauce in a small saucepan. Bring to a simmer. Remove from heat and stir in blue cheese. Season with salt and pepper. Hold warm for service.
- Step 6
- Cook fries in fryer for 2-1/2 to 3 minutes. Tranfer to a serving plate and serve with warm dipping sauces on the side.
