Preparation Instructions:
- Step 1
- Thaw avocado according to package directions and hold.
- Step 2
- Prepare grain blend according to package instructions. Chill.
- Step 3
- Whisk caesar dressing with lime juice and lime zest. Reserve chilled.
- Step 4
- In a bowl combine 3 oz. (1/2 cup) chilled grain blend, 2-1/2 oz. (1 cup) chopped lettuce, 1 fl. oz. caesar dressing and 1/4 oz. crumbled queso fresco. Toss to combine. Transfer to a serving bowl. Top with 3 oz. grilled chicken, 1 oz. avocado dices, 1/2 oz. pickled red onions and 1/4 oz. queso fresco.
