Step 1: Dressing
Ingredient Weight Measure
Dijon mustard 2 oz.
Honey 2 oz.
White wine vinegar 3 fl. oz.
Olive oil 6 fl. oz.
Tarragon, fresh, chopped 2 Tbsp.
Salt 1 tsp.
Black pepper, ground 1/2 tsp.
Step 2: Monaco Blend

Step 3: Salad Ingredients

Red pepper, julienne 12 oz.
Jicama, julienne 10 oz.
Almonds, slivered, toasted 2 oz.
Preparation Instructions:
Step 1
In a stainless steel bowl, whisk together the dressing ingredients until emulsified.
Step 2
Prepare the vegetable blend according to package directions. Drain and chill.
Step 3
In a large bowl, combine the vegetable blend with the red peppers and jicama. Toss with dressing to coat. Just before serving, add the toasted almonds to the salad.
