Step 4: Vegetables

Preparation Instructions:
- Step 1
- Place water and bulgur in a saucepan and bring to a boil. Cover, reduce heat and simmer for 15 minutes. This may be done in advance and chilled.
- Step 2
- In a food processor bowl, combine the first 7 ingredients of dressing and pulse to combine. While the processor is running, slowly add the olive oil to create an emulsion.
- Step 3
- Prepare the vegetable blend according to package directions. Drain and chill.
- Step 4
- In a large bowl, combine the vegetable blend with the bulgur, tomato, cucumber, red onion and parsley. Toss the salad with the dressing to coat evenly. Cover and refrigerate for 2-3 hours before serving to allow the flavors to marry.
