Barbados is known for its delicious spicy fish dishes, and this bowl brings the classic flavors of the islands together. With crispy red snapper fillets atop cilantro lime rice, peppers, onions, papaya, habanero mango salsa and a honey melon glaze.

Cilantro, fresh, chopped 2/3 cup
Lime, zested and juiced 1 each
Garlic, minced 2 tsp.
Habanero pepper, seeded, minced to taste
Honey 5 fl. oz.
Cantaloupe, purée 5 fl. oz.
Kosher salt to taste
Black pepper, ground to taste

Red Snapper fillets (6 oz. each) 10 each
Papaya, fresh, peeled, seeded, diced 12 oz. 2 cups
Preparation Instructions:
Step 1
Thaw mango according to package instructions.
Step 2
For Mango Salsa: In a bowl, combine mango cubes, cilantro, lime zest, lime juice, garlic and habanero pepper. Reserve cold.
Step 3
For Honey Melon Glaze: In a mixing bowl, combine honey and melon purée. Whisk vigorously until well combined. Season with salt and pepper. Reserve.
Step 4
Prepare peppers and onions and cilantro lime rice according to package instructions. Reserve hot. Pan sear red snapper fillets until thoroughly cooked. Reserve hot.
Step 5
For each serving; portion 4 oz. cilantro lime rice into a serving dish. Top with 4 oz. peppers and onions and 1 red snapper fillet. Top with 2 Tbsp. papaya, 2 Tbsp. mango salsa and drizzle with 1 fl. oz. honey melon glaze.
