Preparation Instructions:
- Step 1
- Add avocado pulp, butter, serrano pepper, garlic, lemon juice and Kosher salt to the bowl of a food processor and pulse until the mixture is evenly combined. Transfer to a plastic container or place on parchment paper and roll up into a log. Refrigerate until firm, about an hour.
- Step 2
- Season steaks generously on both sides. Cook on preheated flat iron skillet or griddle over medium-high heat until desired doneness. Transfer to a plate and rest for 3-5 minutes.
- Step 3
- Prepare potato wedges according to package instructions. Hold warm.
- Step 4
- For each serving; place steak on a wooden board, top with 2 oz. avocado butter and serve with 4 oz. potato wedges.
